Loire Valley, France. 100% Chenin Blanc. One of the earliest practitioners of Biodynamics, Domaine Huet started farming Biodynamically in 1990 and has been certified since 1993. This ancient, walled vineyard has the estate’s shallowest, stoniest soils. The wines are rich and intense. Many consider this to be Vouvray’s finest single vineyard site.
The wine undergoes temperature-controlled fermentation in large, old oak demi-muids and stainless steel vats. There is no encouragement of the malolactic fermentation, thus many Huet wines remain rich in malic acid, a character that brings an age-worthiness to the wines. The concentration of residual sugar in demi-sec cuvées is traditionally around 10-20 g/l.
The wine is bright, full-bodied, complex, and beautifully balanced, with a lovely core of fruit, a touch of honey, good acidity and focus, and a long finish.
