This iteration of the Redbreast Pedro Ximenez Edition Single Pot Still Irish Whiskey is a wonderful example of the brand's high-quality craftsmanship and rich flavor profile. It is a part of Redbreast's esteemed Iberian Series, inspired by the brand's collaboration with top cooperages and wine experts from the Iberian Peninsula. The whiskey is matured in a selection of bourbon and ex-Oloroso sherry casks before being transferred and finished in premium Pedro Ximenez hogsheads for at least 12 months. Only a limited quantity was produced, and it was made available for the first time in 2021. This exceptional Irish whiskey boasts an aromatic bouquet of rich chocolate, bush berries, and toasted barley grain infused with spices. The palate is tantalized with layers of warm honey, toffee, blackcurrants, raisins, and citrus.
